Wrap your chicken in aluminum foil and cooking for 1.5 hours at lower temperatures (70 C). Then unwrapp and cook it at high temperature for 15-20 minutes. Turn off the oven, but don't open, let the chicken sit for another 30 minutes. You'll get juicy chicken with crispy skin. Also, take your time and brine the chicken overnight, before you cook it.
